In the summer heat, there’s nothing like a Popsicle to cool you down. But your icy treat doesn’t need to come loaded with sugar and artificial colors. These creamy, fruity pops are loaded with heart-healthy fats and vitamins A, C, E, and iron—with no hint of spinach, we promise.
Green Smoothie Popsicle
Yield: 20 mini Popsicle
2 ripe mangoes, peeled, flesh cut away from pit
1 avocado, peeled and pitted
1 ripe banana, peeled
2 handfuls spinach
2 cups coconut water
Place all ingredients in a blender and blend on high until fully smooth.Pour smoothie into small paper cups or Popsicle molds, place in Popsicle sticks, and freeze a minimum of 4 hours. To unmold Popsicle, run the molds under warm water 5 seconds to loosen from molds.
