Chia Seed Pudding
Add Some Chia to Your Life!
These little seeds have come a long way from the seeds you grew in those little head-shaped pots from the ’80s that sprout to look like hair. Now they are chocked full of health benefits and deliver a boost of energy, all the while they are great for digestion and can help lower cholesterol. They’re mighty high in fiber — 11 grams in a one-ounce serving. They’re high in omega-3 fatty acids, manganese, phosphorus, and protein. They may also help stabilize your blood sugar, which could help people with type-2 diabetes, and they fill you up!
CHIA SEED COCONUT CREAM PIE PUDDING
Healthy, but tastes like dessert!
4 Tbsp. Chia Seeds
1 Tbsp. Vanilla
2 cups Coconut Milk
½ cup sweetened coconut flakes
1 Tbsp. honey
Put all ingredients in a container with lid, stir well, making sure chia is well incorporated into the liquid.
Refrigerate overnight, or for 5-6 hours
Serve with sweetened coconut flakes garnish, fresh fruit, granola, etc.
This is a totally guilt free and awesome tasting pudding. Blueberries, strawberries and raspberries contain plant nutrients known as anthocyanidins, which are powerful antioxidants. And blueberries have resveratrol, which helps protect against the lead cause of death in the US–Heart disease!
1½ cups almond milk
¼ cup chia
1 tsp vanilla
¼ cup blueberries
¼ cup strawberries
Whipped cream (optional)
1 cup vanilla Greek yogurt (optional)
In a container or jar, mix chia, vanilla, and almond milk together.
Refrigerate for at least 4 hours (Overnight works great)
Remove from fridge and stir in berries, top with more berries, whipped cream, slivered nuts, or whatever you want.
If you want it a little thicker or creamier, stir in a cup of vanilla Greek yogurt.

4 Tbsp. Chia seeds
1 cup coconut milk
1 cup almond milk
2 tsp vanilla
1.5 tbsp. honey (or sweetener of choice)
4 tbsp. sweetened coconut flakes
2 cups fresh cut mango
Put all ingredients in a refrigerator safe container
Stir well, making sure the chia seed is all mixed in
Refrigerate for 5-6 hours minimum, allowing time for the chia to expand and soak up the liquid
Garnish if desired with more coconut flakes or fresh mango
